To Make Bisket of Potato-Roots or Parsneps -- Hannah Wooley (1681) first English cookbook attributed to female author. Notes: gum dragon is tragacinth; searced means sifted; and we must research whether these are sweet potatoes or white potatoes at this early date. This is a recipe for the artistic among us.

Salmagundy -- Hannah Glasse (1747) the book Martha Washington had her slaves cook from, as adapted by member Sandra Oliver.

Solomon-a-Gundy -- contemporary Jamaican version. Note: native Caribbean allspice and African diaspora hot peppers influence what is now less salad than dip or spread.

Three vegetable recipes (1542-1695) -- Note sugar and citrus coming onto the English table. (recipes located by member Sarah Boardman).

To Make a Frykacy (1569-1591) -- More lemons in this chicken fricassee recipe from a manuscript cookbook inherited by Martha Washington, but probably written 200 years earlier.

Pickled Salmon (1769) -- The Royal Governor of Massachusetts corresponded with Benjamin Franklin trying to find this British technique for preserving the what were already dwindling runs of this prolific fish in New England. The recipe he found and shared with friends is easy and delicious. Make ahead and add to your salmagundy.
